In the case of Allods Online, here's what every role is supposed to do:

Helmsman: Like Bryan said, they take care of steering. They operate 3 elements, the steering wheel (controls left-right movement), engine (speed) and vertical motor (up-down movement).

Navigator: They take control of the state of the ship. Distribution of energy, mainly. They decide how much energy goes to the security shield, for example, and they must monitor the reactor so it doesn't overheat. They also have the best view when it comes to the Astral, so they can see enemy ships from far away.

Cannoneer: Attack force. There are 2 guns at their disposal. Machine gun and Torpedo launcher. The machine gun is faster but deals little damage. The torpedo launches is strong, but has a long reload rate.

Repairman: They take care of damage done to the ship. They do not repair, as their name implies, they actually control a bunch of NPCs called Goblin Repairmen and place them in the right spot. They actually give orders on what to repair and when.

Ship interface, this is how you choose your role on the ship.
This is what other Astral Ships look like, ping glow is the shield.
Helmsman interface, all the controls are there.
The mana-reactor, most important part of your ship.
The "machine-guns".
Torpedo launcher.
Why hello there Mr. Astral Demon, would you like a cup of tea? Why yes, I'm aiming at you with my gun. Please, do not destroy my Ship.
