Gurren Lagaan Tengen Toppa(Is Tengen spelled right?) is good. It's ending was pretty cool and odd at the same time.
Jin-Roh I've never heard of, nor is it on the site I use O.o
Another good one was Fate/Stay night, though it's not really mature, it's a good anime in general.
A mature one would be...Blood Plus(Blood+ is the real name)? Maybe?

I tried watching Gurren Lagann, it was way too absurd for my taste!

Don't know if it has been mentioned yet but Kurozuka is also awesome. It's a definite adult anime and the art work's simply stunning. Kinda reminds me of Samurai Champloo.

Ummm...just to throw a couple out there..

Dead leaves is great, short but great. Its more of a movie.
ROD: the TV is another great one I enjoy. That one is a series.
Hyakko if you like comedies.

And if you haven't already seen Vampire Knight and Vampire Knight Guilty, watch 'em.

Casshan Robot Hunter is a classic in my opinion, the 90's reboot I mean. Casshan Sins doesn't come close. 8-Man After is a good one too.

Good luck finding them though.
