reading through guides I found people saying to reroll stats until you get what you want but when I made my character I could not find a way to reroll stats. Are the stats fixed now and you have to keep them?

Nexon made it completely easier now. First you choose your name and a random avatar generates. You click the next button to customize your avatar. Then, when completed, you drop off at Maple Island. It's best if you put all STR for the first levels. At level 8 you advance as a magician. At level 10 you advance as either warrior, thief, pirate, or archer. Your AP will be reset.
