Well, according to some Russian testers. You can, and will in fact be attacked by Astral Demons while fighting another ship. There's a tale about how an Empire (or League, don't remember) engaged in battle a League ship, and when things started to look bad for the Empire ship, the League Ship didn't notice an Astral Demon approaching them. The results: League Ship was destroyed.
But the problem was... as soon as the Demon defeated the League Ship, it noticed the other one fleeing, and so it followed.
Result: Both ships were destroyed by the same Astral Demon.
