CPU: I'd roll back to the i5, if you plan to play any Valve games(I mean, they're the largest PC game developer...), the i7 is currently having compatibility problems.
MoBo: if you choose to stay with the i7, I'd switch to a Gigabyte, I don't have any grudge against Asus, but I heard that the P6T is not the best MoBo if you have a choice. Also, I'd go to 2 way CF or SLI instead of 3 way, it's much easier to manage and waste much less power for similar performance.
PSU: I'd choose a branded PSU since they usually use a XION, which is HORRIBLY low quality for the price, it cost ~$60 retail(just it self) for a 700w, but it only puts out I think 500w and don't use quality internal parts.

For bang for the buck value, I'd say it's fair, including the price of labor. I think you'd handle Aion just fine. I can run AION maxed out, on 1080p on a weaker quad(Q6600 to be specific) and Aion, last time I check, is like most MMORPGs, which are heavily CPU dependent.
