The characters' back-stories no longer really interest me, and as you mentioned, their personalities do seem to have become downgraded over the years, though the technical quality of them have improved very much.
Final Fantasy's story formula is much what you said, member of BAD GUY ORGANIZATION / NATION X, GOOD GUY/GIRL has "moral epiphany", leaves said Organization / Nation, joins a rebel group, ends up dismantling evil schemes, thus saving the world with the Power of Love and Friendship once more.
Or just have the main character get mixed up in some nonsense, and just sticks along for the ride. Like FFXII.
Though that is probably the [Japanese]RPG formula in general, and not just Final Fantasy, either way, it's been starting to take it's toll on me.

Well in seven the storyline is just so damn deep, its not nearly as simple as what you propose. I don't know if you were too young to understand whats going on or have never played the games. The sequels really don't add too much to the story, they just elaborate on seeds planted in the first one.
But, thats coming from a fanboy so...
