Easy. Because if you're pure, you focus on one stat mostly (strength, attack, defense), so it takes longer to level up that skill, meaning if you're only leveling up strength, it takes much longer to gain combat levels because you're focusing on one stat. Thus, it takes more damage to level up overall, which is how HP levels, by your amount of damage.

A pure STR deals more damage and takes more damage.
you get like 4 exp for each damage you take in and 1 exp for every damage you dish out. Therefore a Pure STR would get more HP than an Pure DEF |
