Well, as you probally know, GW have 3 standalone games and 1 expansion:

Prophecies:
It's the original Guild Wars. In Prophecies, you can find a very slow leveling through the campaign, while leading you to the story (which is very good, by the way). In Prophecies you can find the "Core" professions, which are the professions that every GW have in their games:

Professions:
-Warrior
-Elementalist
-Monk
-Necromancer
-Ranger
-Mesmer

This version is really good to start with, since it connects with the only available expansion: Eye of the North. Even though the other 2 campaigns can enter the expansion, its content is based on Prophecies story line
Beside of the expansion, this version is slow paced, therefore you can enjoy the game before hitting the level cap way too soon (Although the idea of the game is to complete the story, and use PvP content)

Factions:
It's the second Guild Wars game that Arena Net released. In Factions you can find a really fast leveling through the campaign. However, it's very newbie-unfriendly You can find a lot of PvP based things, such as Alliance Battles and 2 other professions, which are pretty used through the PvP:

Professions:
-Warrior
-Elementalist
-Monk
-Necromancer
-Ranger
-Mesmer
-*Assassin
-*Ritualist

*The Assassin and Ritualist are only Factions only. Therefore, you can't create an Assassin outside Factions, even though you have Prophecies with you.

I don't really suggest this campaign for starting, I would get it for the last, if possible.

Nightfall:
This is the third Guild Wars game of Arena Net. In Nightfall you can find the leveling not fast, neither slow. It has a new system which is Nightfall only, where you can have "Heroes" with you. They act like NPCs assisting you in battle. The difference of Henchmens (NPCs you can get in a Town/Outpost), is that you can customize your heroes (i.e Giving a Hero certain weapon, certain attribute points, certain skills, ect.)
In Nightfall you can find 2 extra professions, which are:

Professions:
-Warrior
-Elementalist
-Monk
-Necromancer
-Ranger
-Mesmer
-*Paragon
-*Dervish

*Same as Factions, you can only create them in Nightfall; even though you have Prophecies and Factions.

I also suggest this for starting, it has the system of Heroes to help you out on missions, and you can level a little faster than in Prophecies.
