Read the manga instead if you want to go that route. For slice of life goodies, check out Victorian Romance Emma, Azumanga Daioh, Beck - Mongolian Chop Squad (try to cope with the bad Engrish), 5 Centimeters Per Second, and one really nice one that deals with the life of a house-ridden burden to society, Welcome to the NHK. Then one good anime that isn't slice of life but instead, surrealism, Revolutionary Girl (Shoujo Kakumei) Utena.
ROFLMAO

I'm not sure but I think these might be considered slice of life:
ARIA Mushishi Seirei no Moribito Moyashimon Toshokan Sensou

If you like slice of life, you should totally watch Yokohama Kaidashi Kiko. It is really the best slice of life type anime/manga. It teases you with an extremely intriguing setting that is never elaborated on because of the nature of the anime. Each little story is told in a nice, relaxed pace that really puts you at ease. Its probably the definitive example of slice of life. Unfortunately, there are only 4 OVA episodes. If you want more, you'd have to read the manga.
Some other good ones would be Aria (all three series), Lucky Star, Hidamari Sketch, and Azumanga Daioh. I would also recommend Genshiken, but there is a little bit of an overarching plot in that one.
