Good RPG with Rogue/Assassin/Stealth class - Page 3 - Single Player Games

Neverwinter Nights 2 have rogue, and some other stealthy prestige classes. You get options for dialogs in the story which can effect your alignments and other stuff; it's a pretty good RPG imho

There are actually a quite number of RPGs with stealth,

Neverwinter nights 1(rather old)&2 with all expansions
Baldurs Gate 2(rather old)
Elder scrolls III and IV
Fable (can be stealthy)
Fallout 1,2&Tactics(Fallout 3 if you can wait

)
Icewindale 1&2(rather old)

If you werent looking for an RPG, the game as follows is a nice choice too:

Assasin's Creed
Splinter Cell series
Hitman Series
Tenchu Series
Prince of Persia series
