I recommend Samurai Champloo. It has some great fight scenes. Some of the best I have ever seen.
A couple other good ones that have decent action are Fullmetal Alchemist, Eureka 7, Buso Renkin, Hellsing, and Berserk.

That a tough one. Champloo definitely has better action, but it has a kind of erratic storyline. FMA, on the other hand, is pretty straightforward and has a lot of drama. IMO, both are really good, but I would probably pick Champloo.

I don't really watch anime anymore (don't have cable TV anymore), but I used to watch a bunch. Action, I'd recommend Trigun. It has a great storyline, the music is SUPER catchy, and the best gunfights you'll ever see.
Edit, actually Trigun has some of the best music I've ever heard!

For a good starter show you should definately watch Samurai Champloo. If you're still interested afterwards, try Cowboy Bebop (from the same creators).

Samurai Champloo and Trigun should be enough to last you for a good, long while. You might want to check out Bleach too, it has a pretty cool storyline, cool sword fights and good music as well.

Porn. Lots, and lots of Porn. Or Cowboy Bebop. If you want romance and bleeding robots, then try Eureka Seven. If you just want bleeding robots, then try Neon Genesis Evangelion. If you don't want robots at all and just want bleeding, then try Afro Samurai, HellSing, Gantz, Elfen Lied, & Berserk.
Psychological thriller goes to Paranoia Agent, hands down.
If you want comedy, try FLCL (Furi Kuri), Magical Shopping Arcade Abenobashi, Cromartie High, Great Teacher Onizuka, Excel Saga, Azumanga Daioh, Crayon Shin Chan (you'll bust a friggin gut watching Shin Chan)*, and many more.

For really good action I recommend the Rurouni Kenshin (OVA's), Ghost in the Shell (Any Movie or TV Series), Ergo Proxy, Hellsing, Cowboy Bebop, Full Metal Alchemist, Gunslinger Girl, and Trigun.

Tengen Toppa Gurren-Laggan maybe? Or Elfen Lied. I have summer vacation too, and the animes I've watched so far is Naruto and Azumanga Daioh. Really need to watch some more but the thing is we only have one computer and my dad needs it for his work so that sucks. And the Devil May Cry anime looks promising too.

The cast consists of a yellow perverse floating ball-thingy, 20+ male ninja that all look the exact same, a bi-curious female ninja who has a crush on her friend, a normal school-going girl that happens to be friends with that female ninja, and the coke-headed lady that's in love with that floating ball-thing.

Trust me. Puni Puni is anything but cute. And 2x2 is a spoof in itself.
The two of them are in-between animes anyhow. There isn't a plot so you can watch it at any time. But yeah, go for CBB. Same directors as Samurai Champloo.

There are three versions, so you'll be on it for a while. :D
There's the original Ghost In the Shell released in 1995, then there's Ghost In The Shell: Stand Alone Complex that was released in 2001, then there's Ghost In The Shell Stand Alone Complex: 2nd Gig.
There are also a bunch of movies to go with it. :)
