What does spec mean for talents? And for Hunters, Paladins and Shamans what talent tree should i work on for leveling up and pve?

I believe spec stands for specialty.

Spec is like the specialization of a talent tree. Every class gets 3 talent trees as you know.
Shaman-I just made one and i believe enhancement is best lvling and its also good pvp. Im not sure about elemental tho
Paladins- Retribution is the talent tree to lvl and do the most damage. But most the time you will end up healing in groups
hunter- Im pretty sure the best lvl up is beast mastery. But i think once u get alot higher lvl switch to marksmanship so u can do alota damage

You're spec is what talent points are in what talent tree like (42/0/6).
For example every class has three talent trees and each has its own advantages and disadvantages.
After level 10, you can put one point into a talent and each level after that awards one talent point. At level 70 you'll have 61 talent points.
For example a priest's three talent trees are Shadow, Discipline and Holy. Shadow is meant for damaging, Discipline is meant for saving mana (or something of that sort) and holy is meant for healing. Someone could spec full shadow, but then decided he wants to heal better and go holy. To respec you go to your Class Trainer and say you wish to unlearn your talents and you are allowed to for a certian amount of gold.
Hunters are a dps class, meaning they do nothing else but damage. They can't heal or tank so they can only fullfill damage. All of their talent trees are focused on damage, but each talent tree has its own style. To which style suits you is the best one, but there is no specific greater talent tree for soloing.
Shamans are a complicated class. They can do a little bit of everything (except tanking at higher levels). They have resto (healing), enhance (dps) and elemental (dps). For soloing I recommend enahncement or elemental. You'll have a tougher time solo'ing if you took the resto path.
I'm not entirely sure about paladins, for I am horde =). I know that theres Protection (tanking), Holy (healing) and Retribution (not entirely sure).

Thank you guys for the help. I have two chars in the 20's but I never really knew much about talents, thanks for the help. I have also found some builds which have helped me out a bit.

I find that spec doesn't really start becoming important until the later levels when you start getting stuff.
Example priests get Shadowform at level 40.
