Any anime based almost entirely on weapons?
Need it be guns or blades I dont care :]

Not anime, but Manga, Blade of the Immortal.

Some of the most unique weapons I've ever seen, and amazingly beautiful fight scenes.

And with the main character being a multi-weapon fighter, fighting with not two, not three, but up to twelve weapons at a time, body parts go flying all too often.

Busou Renkin is all about the weapons. Some of them don't look all that great, but I think the show is worth watching.

gundam seed? is that one?

Try Burst Angel (Bakuretsu Tenshi). Some really nice guns in that show.

If not that, then Samurai Champloo. That yo-yo like weapon near the end of the series owned so hard. :D
