Samurai 7: Based of Akira Kurosawa's movie, it's good.

Afro Samurai: not exactly your traditional samurai series but might as well give it a shot.

Bakumatsu Kikansetsu Irohanihoheto: Watching it right now, awesomeness:D

Seirei No Moribito: Nice story, not samurais but a spear wielding warrior.

Ninja Scroll: Ninjas, not the naruto type.

Ronin Warriors (Yoroiden-Samurai Troopers): Samurais in the modern age. I liked the armors they wore, may not be of your taste if you're into traditional series.

Can't think of anything else, but there are lot out there.
