Shame you said roguelike with good graphics... I was going to say Dwarf Fortress.

However, if you own a PS2, look into Champions of Norrath (or its sequel Champions: Return to Arms). Its kinda like Diablo, but it plays more like a top down action slash'em game. 1st game features randomized maps. (Persona 3 and Baroque on the PS2, a RPG, also features randomized dungeons).
