I actually realized this the other day, it's pretty cool. Before cooking, but after defrosting, soak chicken in ice water. Yes, you heard me, ice water. Take it out after a couple minutes and marinate it in your own style selected, cook it. You'll have the most juciest and tender chicken ever.
