Want amazing action scenes? Afro Samurai is the bomb. Cowboy bebop (the series or the movie) is pretty good at it too, even if a lil less actionny. Ghost In The Shell: Stand Alone Complex has nice action sequences too. There's Hajime No Ippo too, VERY good, even the battles in the manga look awesome. I love "Dead Leaves" too, it's an Ova worth watching, wacky cartoon style, but pleasant and well animated.

EDIT: Nevermind.. some were already suggested. But Kateikyoushi Hitman Reborn hasn't been mentioned, and it's pretty good.
Soul Eater, for now. Every episode is on par with the manga chapters. I find that funny, since every episode is literally about the length of one chapter from the manga (each chapter = about 40 pages).
Also, stay AWAY from Hitman Reborn.
It's the biggest waste of time you'll ever commit to.
