Fish used in Sushi is called Sashimi (raw fish) and typically only comes from saltwater oceans. This minimizes the risk of parasites considerably if not all the way because salt naturally kills most forms of bacteria. That is why salt is used as a preservative, etc. Sushi served in say, the United States is almost always frozen, again destroying any bacteria that could be left.

I have eaten possibly thousands of servings of sushi and I have ever only had a mildly upset stomach once, and even then I think it was because I ate way too much (oops.)


Also Xenthydos, Salmon is the best. At a respectable sushi restaurant, be sure to order Salmon nigiri next time after a hand roll California roll and bowl of miso soup. I promise you will never find anything better. :)
