I really want to play this, but I didn't like the demo much. The gameplay on youtube once you get to the open world areas seems so good though.

The gameplay in the demo is the gameplay in the real game. Chances are if you didn't like how the gameplay was in any part of the demo (prologue or the open field one) you won't like the game.

There's no drastic change.
