I honestly think it was Sephiroth from Kingdom Hearts 1. You had to be like level 70, way higher than you needed to beat the game, and he was still tough. I may have been young, but winnning that fight made me so happy.

anyway, if I go old school I'd say Ozma from FFIX or Omega weapons from FFVIII.

Monster Hunter series, Dark Souls, Shadow of the Colossus all have some epic boss fights.

what kbe said, adding Demon Souls and the Akrid X and Sandworm fights from Lost Planet 2, especially the second Sandworm fight. One of the most epic (co-op) moments I've ever had in a game.

Sephiroth was easy in both games. =/ I can't think of any boss fights I would consider epic. I really liked fighting Ghirahim in Skyward Sword. Ninja Gaiden was always pretty exciting in the boss fights too.
