I like them for how accecsable they are, especially to those who don't play many games. My non-gmaing friends quickly understood the concept (place first) and controls are not to difficult (in most cases) either.
What do I love about kart racing games? It's more then a simple racing game. There's tactics, power ups, speed boosts and most importantly the fun. Always a good party game or some fun online mayhem. From my early days of Mario kart, Lego racing, and crash bandicoot; I hope Kartrider his me right in the feels.
I've always been a big fan of racing games. The first reason is that you can have a background playing almost any genre of game, and still manage to feel skilled in racing games after just a tiny bit of practice. There's just a universal feel to them that almost anyone can understand. The second reason is that the entire genre is centered around going fast, which makes the entire experience exciting, unlike other types of games that have some downtime in between exciting parts.
I've loved racing games ever since playing Pole Position in the arcade at the mall. There's nothing like going head-to-head against your friends to prove who can drift the best, and having the best time on a course.
