I was told that Vegetarians do not eat meat.
But I am confuse on whether they eat mostly veggies and little meat. Like 75% veggies and 25% meat.

They don't eat meat.
At all.
It can be healthy if you intake everything that you need to substitute for meat. I wouldn't do it, though. It's completely ridiculous IMO.
Stick to hamburgers and steak.

But red meat is not very good for you, and you can get protein and whatever else, from other sources rather than meat.
