Races don't really matter in the game, while they do effect your abilities to a certain extent, it's more play style which will govern how well you do.

As for subjob, it depends on the situation, but, in general most parties will want some back-up healing, so, White mage would be a good idea.

tarutaru sum/whm is what you are looking for. Or elvaan.

Elvaan are not for Summoners, first is Tarutaru, second are humans. Summoners need one thing, MP, and elvaans lack that. (Not as bad as galka's) overall I would suggest a Taru because you can get hp earrings and rings, so your lack of HP doesn't effect you much in fighter classes, especially for Pld and Drk. Your main issue will be a warrior, all other classes can be done well on a taru.
