You have look at anime like you look at any of form of entertainment. Sure, most of it is crap, but if you delve deep enough you will find some gems. Generally, anything aimed at a primarily mature audience is likely to be more interesting than most of the others (And no I do not mean hentai; anime porn is often even worse then regular anime).

I third GTO (Great Teacher Onizuka).

I also recommend Hajime no Ippo. You can watch it, or read it, but the anime is discontinued. It does, however, give you a good 300 chapter jump into the manga, though.

Also...FLCL. 6 episodes of smex.

If you want another "Oh Wow" anime. Then you should check out Ghost in the Shell because it follows the same kind of trickery as Death Note.

Also try Monster if you like drama/thriller/horror/suspence.
